Macaroni Salad



Yummmmmmmmmy ! I just Love this kind of salad ^________^

Ingredients ♥ ♥ ♥

* 2 cups dry elbow macaroni, cooked, rinsed, and drained
* 1/3 cup diced celery
* 1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
* 1 tablespoon minced flat-leaf parsley
* 1/2 cup prepared mayonnaise
* 3/4 teaspoon dry mustard
* 1 1/2 teaspoons sugar
* 1 1/2 tablespoons cider vinegar
* 3 tablespoons sour cream
* 1/2 teaspoon kosher salt, plus more to taste
* Freshly ground black pepper
* 1/2 cup canned green peas
* 1/2 cup diced carrots

Directions ♥ ♥ ♥

In a large bowl combine the macaroni, celery, onion, carrots, green peas, and parsley .

In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt.

Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

Simple recipe for shrimp salads ♥ ♥ ♥




Ingredients ♥ ♥ ♥

* 3 tablespoons plus 1 teaspoon kosher salt
* 1 lemon cut into quarters
* 4 pounds large shrimp in the shell (16 to 20 shrimp per pound)
* 2 cups good mayonnaise
* 1 teaspoon Dijon mustard
* 2 tablespoons white vinegar
* 1 teaspoon freshly ground black pepper
* 6 tablespoons minced fresh dill
* 1 cup minced red onion (1 onion)
* 3 cups minced celery (6 stalks)

Directions ♥ ♥ ♥

Bring 5 quarts of water, 3 tablespoons salt, and the lemon to a boil in a large saucepan. Add half the shrimp and reduce the heat to medium. Cook uncovered for only 3 minutes or until the shrimp are barely cooked through. Remove with a slotted spoon to a bowl of cold water. Bring the water back to a boil and repeat with the remaining shrimp. Let cool; then peel, and devein the shrimp.

In a separate bowl, whisk together the mayonnaise, mustard, vinegar, 1 teaspoon salt, pepper, and dill. Combine with the peeled shrimp. Add the red onion and celery and check the seasonings. Serve or cover and refrigerate for a few hours.

Chili Tortilla Chips Recipe



Ingredients:

2 Tbsp vegetable Oil
1 Tbspoon chili powder
1/2 tspoon salt
pinch of cayenne
Corn Tortillas or Pita Bread

Directions

Cut twelve 6-inch corn tortillas into 6 wedges each.
Toss the wedges with 2 tablespoons vegetable oil, 1 tablespoon chili powder, 1/2 teaspoon salt and a pinch of cayenne.
Working in batches, spread on 2 baking sheets;
bake at 350 degrees F until golden, 20 to 25 minutes.

Candy Snack Cake
 
Ingredients
...
* 1 cup butter, softened
* 1 cup sugar
* 4 large eggs
* 1 teaspoon vanilla extract
* 1 cup all-purpose flour
* 1/4 cup unsweetened cocoa powder
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt
* Chocolate Frosting, recipe follows
* Whipped cream, for topping, optional


Directions

Preheat oven to 350 degrees F. Line 9-inch baking pan with heavy-duty aluminum foil.

In a large bowl, combine butter and sugar. Beat at medium speed with an electric mixer until fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla extract.

In a small bowl, combine flour, cocoa, baking powder, and salt. Gradually add to butter mixture, beating until combined. Spoon batter into prepared pan.

Bake for 22 minutes or until a wooden pick inserted in center comes out clean. Spread chocolate frosting over hot cake. Let cool completely. Cut into squares and serve with whipped cream, if desired.

Chocolate Frosting:

* 1/4 cup butter
* 2 tablespoons unsweetened cocoa powder
* 3 tablespoons buttermilk
* 2 cups confectioners' sugar
* 3 (2.07-ounce) candy bars cut into 1/2-inch pieces (recommended: Snickers)

In a medium saucepan, melt butter over medium-low heat. Add cocoa, buttermilk and 1 cup confectioners' sugar. Stir in candy bars and allow to melt. Stir in remaining confectioners' sugar and immediately spread over hot cake.

Yield: 1 cup
Beef and Tomato stir fry

Ingredients:
...
* 3/4 lb top round beef or 3/4 lb flank steak
* 2 tablespoons cornstarch
* 2 tablespoons white vinegar
* 1 tablespoon low sodium soy sauce
* 2 tablespoons vegetable oil
* 1 onion, thinly sliced
* 2 cloves garlic, smashed
* 4 tomatoes, cut in wedges
* 4 green onions, cut in thin 2 inch lengths

Directions:


1. Cut beef across the grain into thin strips; cut strips into 2 inch lengths.
2. In bowl, combine cornstarch, vinegar and soy sauce; mix until smooth.
3. Add Beef and toss to coat.
4. In wok or nonstick frypan, heat oil over high heat.
5. Add beef and stir fry for 2 minutes; add onion and stir fry for 1 minute or until beef is browned.
6. Add garlic and tomatoes; stir fry until tomatoes are heated through, 1 to 2 minutes.
7. Stir in green onions and serve immediately.
